Pouring grease, oil and animal fat down your sink can cause blockages which result in plumbing issues. In a domestic setting, this can be solved by collecting leftover grease and disposing of it correctly, instead of down the sink. However, in commercial settings such as restaurants and bars, you may wish to install a grease trap to prevent a build-up of grease and fat.
Grease traps work on the basis that animal fats and vegetable oils (grease) are 10 to 15% less dense than water and that grease won’t mix with water. Thus, fats and oils float on top of water.
