How does a grease trap work?

A grease trap works by separating water from grease, taking advantage of greases being between 10 and 15% less dense than water. Wastewater enters the grease trap and is then slowed, cooled and given time to separate into three distinct layers. Being the least dense, the grease rises to the top and is trapped by a system of baffles, while any solids within the wastewater fall to the bottom or are collected by a strainer, allowing the clear water to escape the tank to the drainage system free of grease and debris. Of course, this grease and debris will build up inside the grease trap over time, meaning regular waste disposal, tank cleaning and servicing is necessary to keep the grease trap functioning as it should.
